Linda's Lasagna Recipe
Lasagna with cottage cheese and homemade beefy tomato sauce.
I have looked for a good lasagna recipe for years. I've tried all kinds of recipes, ones that use cottage cheese and ones that use ricotta. I love this lasagna recipe. But most importantly my kids love it. My kids are very picky. I usually have to keep reminding them to eat their food during dinner time. I was very surprised to see how fast they ate this lasagna and I didn't have to remind them once to eat it. I really liked the sauce. I think it has a really good flavor. For me the sauce is what makes a good lasagna. I thought that the lasagna held together really well when I cut pieces and scooped it out of the pan. I'm guessing that is because withought it being covered with foil during cooking it dries out a little. Altough it was good this way I tend to like a lasagna that is a little juicier. Next time I may sprinkle the cheese on top of the lasagna and cover it with foil before baking it for 30 minutes. Then remove the foil and bake uncovered for the last 15 minutes. Thank you for ending
Call me crazy but I think that the cottage cheese makes this dish so unique and delicious. Although this is not my default lasagna recipe, I use it often and I am always satisafied with the results. I final sprinkling of chopped fresh parsely and shredded basil are a nice and tasty touch to the dish once it has completed baking.
I am only half Italian, so I made this recipe twice. The first time because I had cottage cheese that I needed to use up and was curious as to why half the lasagna recipes on this website say to use this type of cheese. I blended it with a hand mixer like a previous review had suggested. The end result is lasagna that tastes like it was made with cottage cheese. No one would eat it. But I wanted to give it another try, so the second time I used a mixture of good quality ricotta cheese and marscapone cheese instead and it was excellent! I think people who don't like ricotta use the stuff in the grocery store that is next to the cottage cheese. That stuff is grainy and gross. Use real 'rigott' people!
Obviously Stouffers has some bangin lasagna because I loved this recipe. I wanted a recipe that was easy to make and tasted good because it was my first time making lasagna; this recipe did just that. I thought it was fun and easy to make and I didn't have to go spend an arm and a leg for the ingredients like one recipe I saw. My whole family loved this recipe and I will use it over and over again!
This was my first time making lasagna and I was extremely pleased. The only thing I left out was the onions [not a huge fan] but other than that, I followed the recipe to the T and it was delicious. Even my boyfriend, who swore no one could beat his mom's lasagna, has changed his tune. Great recipe!
